Blueberry White Chocolate Chip Yogurt Muffin Recipe



INGREDIENTS

  • 1 large egg or Vegan Egg Replacer

  • 240 mL low fat plain yogurt

  • 80 mL vegetable oil

  • YesYouCan Plain Flour

  • 1⁄2 teaspoon baking soda

  • 3/4 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1 teaspoon vanilla extract

  • 1⁄2 cup granulated white sugar

  • 1 cup blueberries

  • 1 1⁄2 cups white chocolate chips


DIRECTION

  1. Preheat oven to 190°C (ovens may vary)

  2. Grease baking muffin tray or use or make muffin liners

  3. Lightly beat 1 large egg

  4. Mix together 240 mL plain yogurt (low fat or vanilla) and 80 mL vegetable oil, 2 cups YesYouCan Plain Flour, 1⁄2 tsp baking soda and 3/4 tsp baking powder, 1/4 tsp salt, 1 tsp vanilla extract and 1⁄2 cup granulated white sugar (note that because we are using yogurt; the batter will be thick).

  5. Add 1 cup blueberries and 1 1⁄2 cups white chocolate chips, or as many as you would like

  6. Bake for approximately 20 minutes.
