Gluten Free Australia Day Cupcakes



INGREDIENTS

  • YesYouCan Vanilla Cupcake Mix

  • 2 eggs or YesYouCan Vegan Egg Replacer

  • 160ml water

  • 60g margarine

  • food colour

  • shredded coconut

  • chocolate melt


DIRECTIONS

  1. Preheat oven to 160C (fan forced) or 180C (conventional)

  2. Combine eggs, softened margarine, and water to mixing bowl and add the YesYouCan Vanilla Cupcake Mix

  3. Using an electric mixer, mix for 2 minutes

  4. Divide batter in two

  5. Add few drops of yellow food colouring to one batch and green food colour to the other

  6. Fold in a half cup of shredded coconut in the bowl with the green food colour

  7. Pour cake batter in the cupcake tray with silicone patty cases, 6 green and 6 yellow

  8. Sink in a chocolate melt button in the yellow cupcakes

  9. Bake for 20 -25 minutes

  10. Let cool

  11. Take cupcakes out of silicone patty cases and cut in half

  12. Combine one green half cupcake and yellow cupcake and put together with icing

  13. Place on patty case and dust with icing sugar

  14. Serve and enjoy!
