INGREDIENTS
YesYouCan Vanilla Cupcake Mix
2 eggs or YesYouCan Vegan Egg Replacer
160ml water
60g margarine
food colour
shredded coconut
chocolate melt
DIRECTIONS
Preheat oven to 160C (fan forced) or 180C (conventional)
Combine eggs, softened margarine, and water to mixing bowl and add the YesYouCan Vanilla Cupcake Mix
Using an electric mixer, mix for 2 minutes
Divide batter in two
Add few drops of yellow food colouring to one batch and green food colour to the other
Fold in a half cup of shredded coconut in the bowl with the green food colour
Pour cake batter in the cupcake tray with silicone patty cases, 6 green and 6 yellow
Sink in a chocolate melt button in the yellow cupcakes
Bake for 20 -25 minutes
Let cool
Take cupcakes out of silicone patty cases and cut in half
Combine one green half cupcake and yellow cupcake and put together with icing
Place on patty case and dust with icing sugar
Serve and enjoy!
